Apple and Rhubarb crumble
Cut up three / four Grannie Smith apples & a bunch of rhubarb
Couple of tablespoons of caster sugar
2 tablespoons of orange juice and orange rind (special secret ingredient)
Mix and bake for 30 mins
2 cups of self raising flour / some brown sugar
Butter and crumble in your fingers
Back in the oven to crisp up the topping

Kirsty, yes, like you, I can no longer live the life I have been living. I was travelling internationally Port Moresby to Brisbane, every 2-3 weeks to see my boarding school kids. Thank God you’ve put it out there because it was making me feel so selfish to even think of mentioning the 3 holidays to Hong Kong, France/Spain and the Daylesford winery region out of Melbourne that I’ve already cancelled this year. I mean people are dying – surely it’s not my place to mention cancelling holidays?!! But for me, and the way my life works, cancelling my flights to Brisbane every fortnight IS a big deal. It’s my normal life that has been curtailed, no matter how unreal this life seems to others. I cannot see my children anymore unless I quit my job and decide to go to Brisbane indefinitely. What kind of choice is that? Thank goodness for your podcast and this wonderful expat group, where we “get” one another and understand the choices we have to make. For those who say “Let’s close the borders. Surely those who need to come back are here now?”, it’s just so incredibly simplistic and doesn’t help anyone. My hubby will now be celebrating his 50th birthday in Port Moresby instead of Paris – a year of planning down the drain. Thank you everyone for understanding. Have a great day xox
